Why Do Moisturisers Help Prevent Contact Dermatitis?

Probably a barrier effect. Many moisturizers work mostly by adding some moisture to your skin, then forming a barrier over it (e.g. petrolatum, mineral oil, lanolin, etc.).
So the barrier helps protect your skin from things that might irritate it.
Also, dry skin is more likely to have small cracks allowing irritants to penetrate a layer or two to the deeper skin levels.
